Eggplant Meatballs

This is one of those dishes I don't have an exact recipe for. Once you get the basics and if you cook the way I do...you can tweek it to suit your taste. You can serve it atop or with pasta...but they're hearty enough by themselves.

@ 1st I didnt wanna believe that u can make a series out of a serial murderer so I didnt bother seein it. But afta I read the reviews on Netflix I gave it a chance. The 1st 4 episodes sunk its talons on me. Now im on episodes 5-8 & im all giddy & stuff!

Me thinks it is somebodies birthday...... Sorry I am a little late in getting here but I have had my hands full with school holidays and Phillip and his friends taking possession of the computer and setting up a network with all their PC's and gaming almost solidly for the whole holidays! We dropped my Mom off at the airport and the kids go back to school tomorrow so hopefully my life will reduce to a trot rather than a full gallop! Any case just so you know I was thinking of you.... Happy Birthday and I hope it was special and that you have a special birthday weekend! I look forward to catching up and reading all about it.... HUGS xxx
